Automated inspections, predictive crop analytics, livestock monitoring, supply chain optimisation, it’s all happening quickly, and the efficiency gains are real. But from a SOC perspective, there is a less glamorous side to this story.

The sector is adopting AI faster than it is governing it. And that creates a security problem that isn’t solved by buying another tool or adding another dashboard. The real issue is visibility, control, and accountability. In food and agriculture, AI risk is not just a technology problem. It’s a governance problem, a supply chain problem, and very often, a people problem.

Food and Agriculture Is Now a High-Risk AI Environment

The practical takeaway is that AI-related incidents are no longer something organisations can handle quietly or slowly. Reporting obligations are tightening, and accountability is becoming formal.

The AI Act also imposes obligations not only on users, but also on providers and importers of AI components. Security responsibility extends across the ecosystem. That matters in food and agriculture, where third-party technology is everywhere.

Food sector organisations are built on complex third-party supply chains. Vendors, contractors, outsourced infrastructure, all of it is connected. And sometimes, the organisation does not even know what exists inside its own environment.

A real example of a major food company that had vendor-owned servers on-site that they didn’t know existed. When those servers were turned on, ransomware was already present.

The SOC was not monitoring those assets. There were no EDR agents installed. No AV agents. No logs being sent. Contractually, those systems were outside scope. And yet, they were inside the environment.

This is where AI-driven behavioural analytics became critical. Machine learning rules were capable of detecting suspicious activity through traffic logs, flagging that something bad was happening even before the full picture was clear. Deeper investigation suggested ransomware propagation, and it turned out to be WannaCry, an old ransomware, but still present.

The uncomfortable lesson is simple: visibility gaps are still one of the biggest threats in the sector. AI cannot secure what you don’t know exists, but it can help reveal abnormal behaviour faster than traditional monitoring alone.

AI Is Also Accelerating Fraud and Phishing in the Sector

Even with strong technology, phishing remains one of the first vectors for ransomware. AI has made this problem worse, not better. Since the opening of ChatGPT, including the free version, an exponential growth in attackers using AI to create malicious code and generate complex phishing attacks.

The food and agriculture sector is particularly exposed because financial and accounting departments are heavily targeted. Attackers are using AI to research supply chain narratives. They impersonate third-party vendors. They generate believable fraud scenarios.

For example: an email arrives claiming a delivery has been made, “10,000 gallons of milk”, but banking details have changed, here is the new IBAN, please transfer “50,000 euros”. A finance employee checks LinkedIn. The person exists. The vendor looks real. And the money is gone.

There have been fraud cases involving not tens of thousands, but millions. This is the reality. AI has made social engineering more convincing, more scalable, and harder for non-technical staff to detect. You can invest heavily in security tools, but one user clicking a link can still compromise an environment, especially if that user has privileged access.

Governance Must Match the Speed of Adoption

Deploying AI is inevitable in food and agriculture. The efficiency gains are too large, and adoption is accelerating. But organisations need to map AI use cases against regulatory requirements, food safety obligations, and GDPR sensitivity.

The risk with GDPR is where tools querying public AI via APIs can return information indicating an employee has placed confidential PII into a public AI system. That is not a future concern. It is already happening. The sector needs clear policies around data access, identity governance, third-party exposure, and monitoring.
